bhutte ka kees is a popular as well as delicious street food snack from Indore. (MP)some cities in India are famous for their street food and Indore is one of them.
STEP 1.Using a grater, grate the corn kernels. You can also slice off the corn kernels with a knife and then coarsely grind them in a mixie or grinder.
STEP 2.Heat ghee in a pan. Keep the flame to a low and add mustard seeds and let them crackle then add cumin seeds and hing and let them crackle also.now add green chilli and ginger paste stir for few seconds.keep the flame low.
STEP 3.Now add corn paste and saute well.add turmeric powder and red chilli powder.mix well cook for 4-5 mins on low flame.(continue stir in between)
STEP 4.Now add milk mix well and let it come to a boil and then reduce the heat, add salt and mix well. Cover the pan with a lid and simmer the corn mixture till it thickens or start to leaving sides of the pan.
STEP 5.Finally add little sugar, grated coconut, lemon juice and finely chopped coriander, mix everything well. Delicious and tasty bhutte ka kees is ready, serve hot.
