Directions: Bharwan Tandoori Aaloo Recipe

Cooking Directions

  • STEP 1.Parboil the baby potatoes until they are slightly tender.
  • STEP 2.Cut a small portion from the top of each potato and scoop out the center to create a hollow space.
  • STEP 3.In a bowl, mix together spices, yogurt, and herbs to make the stuffing.
  • STEP 4.Fill each potato with the stuffing mixture and press the top back on.
  • STEP 5.Marinate the stuffed potatoes in a tandoori masala paste for at least 30 minutes.
  • STEP 6.Preheat the oven or tandoor to a high temperature.
  • STEP 7.Place the stuffed potatoes on a greased baking tray or skewers and cook until they are crispy and golden, turning them occasionally.
  • STEP 8.Serve hot with mint chutney or yogurt dip.

Cooking Tips

  • Make sure to parboil the potatoes just until they are slightly tender, as they will continue to cook in the oven.
  • You can adjust the spice level of the stuffing according to your preference.
  • If you don't have a tandoor or oven, you can also cook the stuffed potatoes on a grill or stovetop.
  • For a smoky flavor, you can add a small piece of charcoal to the tandoori masala paste while marinating the potatoes. Light the charcoal until it turns red hot, then place it in a small bowl in the center of the marinated potatoes. Drizzle some oil over the charcoal and cover the bowl with a lid. Let it sit for 10-15 minutes to infuse the potatoes with a smoky aroma.
