STEP 1.• Wash and cut the end parts of bitter gourd.Then slit it using knife without cutting it into two parts.Remove the seeds of the bitter gourd and rub salt all over the bitter gourd. Keep it aside for 20 mins.
STEP 2.• Dry roast coriander seeds ,Cumin seeds,fenugreek seeds and Fennel seeds.Cool the ingredients and transfer them to a mixture jar. Add the other spices to the mixer and grind it into a fine powder.
STEP 3.• Heat a pan with some oil and add chopped onion,ginger garlic paste and saute them well.
STEP 4.• Add the masala powder, crushed roasted peanuts , sesame seeds and Jaggery.Saute them well and keep the stuffing aside to cool.
STEP 5.• Wash the bitter gourd a couple of times to remove the bitterness. Stuff the bitter gourd with the stuffing and tie it with a thread so that the stuffing doesn't come out while cooking.
STEP 6.• Heat a pan with some oil and place the stuffed bitter gourds into the pan. Cook them on medium flame till they turn brown in color.
STEP 7.• Finally sprinkle some roasted sesame seeds on top of it and our delicious Bharwa karela is ready to serve. Now remove the threads and serve it with roti.
