Bhapa doi is a unique dessert made with steamed yogurt (‘bhapa’ means steamed). It originated in Bengal and is eaten during Durga Puja celebrations. Different versions of bhapa doi like nolen gur bhapa doi, saffron bhapa doi and mango bhapa doi are popular. There is a misconception that bhapa doi and mishti doi are the same, but they are very different in reality. The yogurt used for mishti doi is not steamed. It is believed that mishti doi was brought to Bulgaria by nomadic tribes almost 4000 years ago.

Ingredients for Bhapa doi Recipe

  • 1 cup Milk
  • 1/2 cup Condensed Milk
  • 2 tablespoon Sugar
  • 1 cup Yogurt/Curd/Dahi

Steps To Prepare

  • STEP 1.Take 1 cup of yogurt and leave on a filter to squeeze the water out of it.

Cooking Directions

  • STEP 1.Add condensed milk to the normal milk and boil.
  • STEP 1.In a pan, caramelise the sugar. Add 2 tbsp of the prepared condensed milk and let it cool.
  • STEP 2.Mix the milk and the yogurt. In a covered pan, heat water to steam.
  • STEP 3.Pour the mixture in a mud pot, cover with aluminum foil and steam for around 20 minutes.

Storage And Serving Method

  • STEP 1.Cool it down, and then refrigerate. Serve as a dessert after garnishing with chopped pistachios.
