A steamed dumpling of mashed rice (leftover) with vegetables, grated ginger, and spices. It is tempered in mustard oil with sesame, mustard seeds and curry leaf.
STEP 1.Fit the grater blade in the food processor, grate bottle gourd that has been peeled and cut lengthwise. Keep aside.
STEP 2.In a mixing bowl take 1 cup cooked rice, add1 small bunch chopped coriander leaves, 1 inch ginger grated, ¼ tsp asafoetida (hing), ½ red chilli powder, ½ turmeric powder, ½ cup besan (gram flour), salt to taste and the grated bottle gourd. Combine all the ingredients well into a thick mixture.
STEP 3.Add 1 tbsp oil and continue to thoroughly mix and knead the ingredients together.
STEP 4.Grease palms and shape the mixture into small ovals.
STEP 5.Grease a steaming plate and arrange the muthia on it. Fill water in a steamer, place the steamer plate, cover and steam on high for 10 minutes.
STEP 6.For the tadka, heat a pan and add 1 tsp oil, ½ tsp mustard and ½ tsp sesame seeds and let it crackle. Add 1 sprig curry leaf. Saue for a few seconds.
STEP 7.Arrange the bhaat na muthia dhokla on a serving plate and drizzle thetadka over them. Serve hot with green chutney.
