A bengali dessert recipe of saffron rice. ragrant, flavourful and creamy on the inside with a crunchy coating of yoghurt and semolina (sooji) on the outside, these koftas make a great tea-time snack. If they look uncannily similar to the Italian arancini, it is probably because they may be inspired by it. The dessert is very popular and tasty.

Ingredients for Bhaat'Er Kofta Recipe

  • 300 gram cooked gobindobhog rice
  • 2 piece green chillies
  • 2 gram Nutmeg
  • 1 piece Cardamom
  • 1 piece Cinnamon
  • 1 piece Clove
  • 4 gram Salt
  • 30 gram Raisins
  • 8 gram Ghee
  • 30 gram khoya kheer/mawa
  • 1 pinch large saffron
  • 1 tablespoon Milk
  • 50 gram Yoghurt
  • 3 gram Ginger
  • As required maida for breading
  • As required sooji for breading
  • As required vegetable oil + ghee for frying

step 1

  • STEP 1.In a bowl add rice and green chilies. Add powdered spices, salt, khoya kheer, saffron and mix. Crush with hand into a paste. Heat ghee in a pan. Add raisins and fry it. Add raisins in the rice mix. Apply ghee on a palm and make small balls of rice. Keep aside.

step 2

  • STEP 1.Crush ginger and green chilies. Add the crush paste in yogurt and mix. Roll the rice ball in flour. then add yogurt and semolina. Heat a pan and fry the balls until golden. Set aside. Serve as dessert.
