Cooking Directions

  • STEP 1.Start by preparing the sponge cake. In a mixing bowl, beat eggs and sugar until light and fluffy. Gradually add flour and fold gently until well combined. Pour the batter into a greased cake pan and bake in a preheated oven until golden brown.
  • STEP 2.While the cake is baking, prepare the mango mousse. In a blender, puree ripe mangoes until smooth. In a separate bowl, whip the cream until soft peaks form. Dissolve gelatin in warm water and add it to the mango puree. Fold in the whipped cream until well combined.
  • STEP 3.Once the cake has cooled, carefully slice it horizontally into two layers. Place one layer of cake at the bottom of a springform pan.
