Besan Wali Bhindi Recipe is a simple everyday Sabzi which is made in almost every Rajasthani household for their everyday meals. Besan Bhindi is prepared with Okra or Ladies Finger where Bhindi is cooked with a besan or chickpea flour-based masala.
STEP 1.Wash the bhindi thoroughly and wipe it with a cloth. Make an incision lengthwise by cutting off the top and bottom of the ladyfinger. Peel the onion and cut it lengthwise thinly. Heat oil in a pan and add cumin seeds to it. Add onion and fry for 3 minutes.
STEP 2.Add bhindi, salt and turmeric, mix and cook on medium flame for 5 minutes with the lid on and stirring occasionally.When bhindi is half cooked, then add ginger, garlic paste, red chili, coriander powder, stir and cook for 2 minutes more. When the bhindi is 75% cooked, then add gram flour to it and stir frequently, so that the gram flour does not stick to it.
STEP 3.When the spices become uniform, and the gram flour is cooked, (it takes 3 minutes for the gram flour to cook), then add amchur powder or lemon juice and stir it. Switch off the gas and keep the lid on for two to three minutes.
STEP 4.Here I have used gram flour raw, you can take roasted gram flour if you want. And also have taken a little more oil so that gram flour can be roasted well in it). Remove the lid and stir the bhindi once. Take out in a serving plate, garnish with coriander leaves and serve.
