STEP 1.Sieve besan in a plate. Add ajwain, turmeric powder, 2 tsp mustard oil, baking soda, 1 tbsp coriander leaves, salt and mix well.
STEP 2.Add water few tablespoons at a time and knead a dough.
STEP 3.Dust it with plain dry flour and roll it in thick roti with a rolling pin. Cut it in desired pieces and place it in plate.
STEP 4.Heat mustard oil in kadai. Fry these pieces until golden.
STEP 5.Remove extra oil from the kadai and leaveing 5 tbsp oil behind. Add jeera and let it splutter. Add onion, ginger garlic paste and fry til golden. Add tomato, salt and mix. Cover and cook for 2 minutes.
STEP 6.Add coriander powder, turmeric powder, red chilli powder, kasuri methi, garam masala and Kashmiri red chilli powder. Cook for few minutes.
STEP 7.Add water as required. Boil it. Now add fried besan pieces. Cover and cook for 5 minutes.
STEP 8.Add coriander leaves and mix. Besan pithor curry is ready. Serve hot with rice, roti or paratha.
