Bhaja bhuji have been an integral part of Bengali cuisine. Bhaja literally translates to “deep fried”. Give them then any vegetable and they would happily make it into a bhaja be it a potato, pointed gourd, banana, Eggplant, cauliflower and so on. It’s important to note that bhaja is different from telebhaja where the later is dipped in gram flour batter and then fried. Bhajas are nothing short of gastronomical delight that always served in the first course of the meal. Most meals in Bengali homes start with a bhaja may be as simple as a aloo bhaja only.  These bhajas or fries also make their presence in most celebratory meal and interestingly then on the plate then five variety is served as that’s seen as a lucky number. One of the most savoured bhaja is the begun bhaja or the aurbergine fry. Cooked in mustard oil this one pairs best with rice and dal

Ingredients for Begun Bhaja Recipe

  • 1 large brinjal
  • 1/4 teaspoon turmeric powder
  • 1 pinch red chilli powder
  • 3/4 teaspoon Salt
  • 1.50 teaspoon Sugar
  • 3/4 teaspoon Flour
  • 80 gram mustard oil

Directions: Begun Bhaja Recipe

Cooking directions

  • STEP 1.Wash big size brinjals and cut then in round shapes
  • STEP 2.Now marinate it with little salt and turmeric.
  • STEP 3.Heat oil in a pan and once it starts to smoke, leave the aubergine pieces in the hot oil
  • STEP 4.Bring the heat to medium and keep turning them in both until well done in both sides.

  • STEP 1.Mix the spices with flour and coat the sliced brinjals with it.

  • STEP 1.Coat the brinjals with the mixture

  • STEP 2.Heat a frying pan with mustard oil

step 5

  • STEP 3.Deep fry the coated brinjals

  • STEP 4.Serve as a side dish with rice and dal
