A healthy side dish from beetroot. Beetroot Thoran is a dry and delectable mildly spiced dish made with beetroots having sweet notes from the beetroot as well as the coconut. A vegan dish. Tastes change with time and now this lovely veggie has become a part of my meal almost every day. Thoran is a traditional Kerala dry vegetable recipe made with grated or finely chopped vegetables like yam (suran), bittergourd (karela) , cabbage (bandh gobhi), carrots (gajar) , beans (beans like chawli beans, french beans) , red amaranth leaves , drumsticks or drumstick leaves.

Ingredients for Beetroot Thoran Recipe

  • 2 tablespoon Cooking Oil
  • 1/4 teaspoon Mustard seeds
  • 1/4 teaspoon Cumin seeds
  • 6 No.s Chopped shallots
  • 6 Chopped garlic cloves
  • 2 No.s Chopped dry red chilly
  • 2 sprig Curry leaves
  • 1/4 teaspoon Turmeric powder
  • 3 No.s Green chilli slitted
  • 2 Chopped beetroot medium size
  • 1 teaspoon Grated coconut
  • As required Salt

Directions: Beetroot Thoran Recipe

step 1

  • STEP 1.Into a cooking pan pour in 2 tbsp coconut oil. Splutter ¼ tsp of mustard seeds.

step 2

  • STEP 1.Then add 6 chopped shallots, 6 chopped garlics, 2 chopped dry red chilly, 1 sprig of curry leaves and saute till brown.

step 3

  • STEP 1.Add ¼ tsp of turmeric powder, 3 green chillies split in half and mix well the ingredients.

step 4

  • STEP 1.Add finely chopped 2 medium sized beetroot and stir well.

step 5

  • STEP 1.Finally add1 cup of grated coconut and a pinch of salt to taste.

step 6

  • STEP 1.Continue to stir cook on a medium heat for 3-4 minutes.

step 7

  • STEP 1.Turn off the flame and serve the beetroot thoran.
