Add this to my list of mac and cheese adventures Quinoac and cheese, bean mac and cheese, cauliflower mac and cheese bake, homemade mac and cheese and now beet green mac and cheese cups. I used beet greens in this dish to create beet green mac and cheese cups. They were delish, and added a wonderful flavor.
