STEP 2.In a bowl add the cut beef, 1 tbsp light soy sauce, 1 tbsp chinese rice wine, freshly ground pepper, ¼ tsp baking soda. Mix well with your hand till the beef fully absorbs the liquid.
STEP 3.Sprinkle 1 ½ tsp of cornstarch and mix well.
STEP 4.Cover and set aside for 30 minutes to marinate.
Cooking Directions
STEP 1.For the sauce, in a bowl add 1 tbsp oyster sauce, 1 tbsp light soy sauce, ¼ cup water, 1 tsp cornstarch, 1 tsp sugar, 1 tsp freshly ground pepper (or as per taste), salt to taste.
STEP 2.For the vegetables, cut ½ green and ½ red pepper into big chunks,slice ½ a large onion and 1 tbsp minced garlic
STEP 3.Heat the wok for 10 seconds on high till smoking. Add 1 tbsp oil and swirl to cover as much surface of the hot wok as possible.
STEP 4.Add the marinated beef and spread it out. Let the beef fry for 15 to 20 seconds on each side and then turn the pieces over till the beef changes colour and get a slight golden brown char around the edges. As the heat is on high and the beef has been sliced very thin, it will cook fast. Take it out of the wok and set it aside.
STEP 5.Into the same wok add another 1 tbsp oil and add the cut vegetables. Stir fry for 2 min. When the onions become translucent, turn the heat to low.
STEP 6.At this stage add the beef back into the wok with the prepared sauce. Mix all the ingredients together quickly. The sauce will begin to thicken. Stir to ensure that beef and vegetables are well coated with the glossy sauce. Then turn off the heat.
STEP 7.Beef pepper steak is ready to serve.
