STEP 1.-1in a mixing bowl add 8 ounces thinly sliced beef, 1 tbsp chinese cooking wine, 2 tsp light soy sauce, 1 tsp corn flour, freshly ground pepper to taste, ¼ tsp baking soda to tenderise the meat. Mix well and set aside.

STEP 2.-2for the sauce, in a small mixing bowl add 1 tbsp light soy sauce,1 tbsp oyster sauce, 2 to 3 tbsp water, 2 tsp corn flour to thicken the sauce, black pepper powder to taste. Mix well to a smooth mixture.

STEP 3.-3fill water in a saucepan and bring it to a boil. Add 1 cup broccoli florets to the boiling water for 1 to 2 minutes till cooked through .do not cover. Remove the broccoli from the pan and place it in ice water for 3 to5 minutes to stop the cooking process.

STEP 4.-4remove and strain the excess water. Keep aside.

STEP 5.-5heat 1 ½ tbsp of oil in the wok. Add the sliced beef and spread them out. Let one side fry for 15 to 20 seconds. Once the beef starts to smoke, flip over the beef using a spatula and let the other side cook for another 15 to 20 seconds. The beef will get a smoky aroma and will brown. At this stage remove from the wok and set aside.

STEP 6.-6in the same wok add a little oil, add 1 tbsp minced garlic and stir. Add the prepared sauce and stir. The sauce will begin to thicken quickly. Immediately add the broccoli and mix it together.

STEP 7.-7add the beef back into the wok and stir well to coat it evenly.
step 8
STEP 8.-8serve the beef and broccoli.
