Bedmi puri is a stuffed puri, it is a popular breakfast street food in north indian states. This crusty puri is generally served with spicy potato curry but here i have paired it with spicy chole, as i wanted to make something heavy as brunch, for my family and guests.

  • 1 cup Soaking Chole; kabuli chana
  • 1 stick Cinnamon
  • 1 black cardamom
  • 1 Star anise
  • 2 Cloves
  • 1 Mace
  • 1/4 cup Cooking chole; oil
  • 2 dry red chillies
  • 1 teaspoon tea powder
  • 1 teaspoon Shah jeera / caraway seeds
  • 1/2 teaspoon kasuri methi
  • 2 teaspoon Kashmiri red chilli powder
  • 2 Onions
  • 10-15 garlic cloves
  • 1 inch Ginger
  • 3-4 Tomatoes
  • 2-3 green chillies
  • 1 stick Cinnamon
  • 1 bay leaf
  • 3 Green cardamom
  • 1 teaspoon chole masala
  • 1 teaspoon coriander powder
  • As required Salt
  • 1 teaspoon Ghee
  • 1 tablespoon chopped coriander
  • As required needed Sliced onions to garnish
  • 1 cup Bedmi poori; wheat flour
  • 2 tablespoon rawa/semolina
  • 1 teaspoon ajwain /carom seeds
  • 1/2 teaspoon Salt
  • 1 teaspoon kasuri methi, crushed between palms
  • 1 tablespoon Oil
  • 1 tablespoon Ghee
  • As required needed Lukewarm water for kneading
  • As required needed oil for frying puri
  • 1 cup Stuffing poori; Udad dal, raw
  • 0.12 teaspoon hing/aesofeotida
  • 1 teaspoon fennel seeds
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon amchur/ dry mango powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon garam masala
