STEP 2.Allow the Millet to soak for 6 hours or overnight in water so that the millets are just under water.
STEP 3.Heat 200 ml of water and add ½ tsp of oil and ½ tsp of salt. Add soaked millet to the boiling water. Reduce the heat and close with a lid. Allow the Millets to cook for 8 to 10 minutes. When a little water is still left, switch off and close with a lid for 10 minutes. Fluff the Millet with a fork and allow to cool for 15 minutes.
STEP 4.In a small bowl add flax seed and curd. Mix it nicely and leave it for atleast 10 minutes.
STEP 5.Boil Carrot and beans and keep aside.
STEP 6.In the meanwhile, add Oil in a Pan add Jeera. When it crackles add ginger, green chillies and Onion. Saute for 5 minutes with 2 tsp of salt.
STEP 7.Add boiled Carrots and beans. Saute for two minutes and then add Turmeric powder, chilli powder, chat Masala, Garam masala. Mix well and add Potatoes nicely mashed.
STEP 8.Now add the cooled millets. Add the Flax seed and Curd mixture. Sprinkle the coriander leaves.
STEP 9.Transfer everything to a big plate and allow it to thoroughly cool. Mix well to incorporate all the spices, vegetables and the millets.
STEP 10.Ale lemon size balls out of the mixture, flatten and shallow fry in a hot skillet. (Can also be deep fried, if you are not health conscious). Gently flip over and fry both sides to golden colour.
STEP 11.Serve hot with Green Chutney.
STEP 12.Enjoy yummy Cutlets.
