These sheet pan chicken fajitas are one of my favorite boneless chicken thighs recipes. They take only 30 minutes and have minimal clean-up because you make them on a single sheet pan.
1/4 pound Boneless skinless chicken breasts or thighs cut into strips
2.50 ounce 1 can diced tomatoes with green chilies drained
1/4 Medium onion sliced
1/2 Large bell peppers seeded and sliced
1/2 tablespoon Vegetable oil
1/2 teaspoon Homemade taco seasoning blend
3 Flour tortillas warmed to serve
