Cooking Directions

  • STEP 1.In a mixing bowl, combine bajra flour, wheat flour, ginger paste, green chili paste, turmeric powder, red chili powder, coriander powder, cumin powder, salt, and oil.
  • STEP 2.Add yogurt and mix well to form a soft dough. If needed, add a little water to adjust the consistency.
  • STEP 3.Divide the dough into small portions and shape them into cylindrical rolls.
  • STEP 4.Steam the muthiyas in a steamer for about 15-20 minutes or until cooked through.
  • STEP 5.Once cooked, remove from the steamer and let them cool slightly.
  • STEP 6.Cut the muthiyas into slices and temper them with mustard seeds, sesame seeds, and curry leaves.
  • STEP 7.Serve hot with chutney or yogurt dip.

Cooking Tips

  • You can add grated vegetables like bottle gourd or spinach to the dough for added nutrition.
  • Make sure the dough is not too dry or too sticky. Adjust the consistency with water or flour as needed.
  • To check if the muthiyas are cooked, insert a toothpick or knife into one. If it comes out clean, they are done.

Storage and Serving

  • Bajra Muthiyas can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, steam the muthiyas for a few minutes or microwave them until warm.
