  • As required Vegetable oil to lightly coat the eggplant
  • As required Salt
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Kashmiri chili powder
  • 1/4 teaspoon Cumin powder
  • 0.13 teaspoon Turmeric powder
  • 1/4 teaspoon Kosher salt
  • 1 tablespoon Roasted, unsalted peanuts skin removed
  • 1/2 tablespoon Sesame Seeds
  • As required Water to make a paste
  • 1.50 tablespoon Vegetable oil any neutral oil is fine
  • 1/2 teaspoon Cumin seeds
  • 1/4 teaspoon Mustard seeds
  • 1 teaspoon Garlic ginger paste
  • 7.50 Curry leaves fresh dried isn't worth the bother
  • 1/2 cup Indian hotel gravy recipe link below
  • 2 tablespoon Coconut milk
  • 1 teaspoon Tamarind paste tamarind paste is not the same as tamarind concentrate
  • 1/2-1 Small tomatoes quartered
