Cooking Directions

  • STEP 1.Preheat the oven to 375°F (190°C).
  • STEP 2.Butterfly the pork tenderloin by cutting it lengthwise down the center, without cutting all the way through.
  • STEP 3.Open up the tenderloin and flatten it with a meat mallet until it is an even thickness.
  • STEP 4.Season the inside of the tenderloin with salt and pepper.
  • STEP 5.Spread the spinach, feta cheese, and sun-dried tomatoes evenly over the inside of the tenderloin.
