Directions: Ayala Varuthathu (fried Mackerel) Recipe

Cooking Directions

  • STEP 1.Clean and wash the mackerel thoroughly. Make diagonal cuts on both sides of the fish.
  • STEP 2.In a bowl, mix together turmeric powder, red chili powder, coriander powder, ginger-garlic paste, and salt to form a thick paste.
  • STEP 3.Apply the spice paste all over the fish, making sure to coat it well. Let it marinate for at least 30 minutes.
  • STEP 4.Heat oil in a deep pan or kadai. Once the oil is hot, carefully place the marinated fish in the oil and fry until golden brown and crispy on both sides.
  • STEP 5.Remove the fried fish from the oil and drain excess oil on a paper towel.
  • STEP 6.Serve hot as an appetizer or as a side dish with rice and curry.

Cooking Tips

  • Make sure to clean the mackerel properly to remove any scales or impurities.
  • Adjust the spice levels according to your preference by increasing or decreasing the amount of red chili powder.
  • For extra crispiness, you can coat the marinated fish with rice flour or semolina before frying.
  • Be cautious while frying the fish as hot oil can splatter. Use a deep pan or kadai to minimize the risk of oil splashing.
  • Serve the Ayala Varuthathu immediately after frying to enjoy its crispy texture.

Storage and Serving

  • Ayala Varuthathu is best served hot and fresh.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
  • Reheat the leftover fish in a preheated oven or toaster oven to maintain its crispiness.
  • Serve the reheated fish with a squeeze of lemon juice for added freshness.
