Aviyal is another signature dish of keralites. This is a simple easy to make healthy dish with a very unique flavor & aroma. A lot of vegetables go into this dish & the end product comes out as one of the most tastiest dishes that you have ever had. There cannot be a sadya or an occasion in kerala where you will not be able to find aviyal on the banana leaf(on which food is served during special occasions). This dish is made with vegetables, curd & coconut & then finally drizzled with coconut oil. This recipe is from my grandmother. This is how we make it in our homes & it is tailored to suit the taste of adults as well as kids. Now let's move on to the recipe.
