  • 0.33 No.s Green pepper cut into bite size pieces
  • 0.67 No.s Tomatoes cut into bite size pieces
  • 0.67 No.s Spring onions finely chopped
  • 1 Garlicfinely chopped cloves
  • 0.17 piece Ginger finely chopped piece
  • 0.33 tablespoon Soy sauce
  • 1.33 tablespoon Cornflour
  • 0.33 tablespoon Sugar
  • As required Oil

Directions: Aubergine And Green Pepper Stir Fry Recipe

  • STEP 1.In a large mixing bowl add 2 large aubergines peeled and cut into bite size wedges.
  • STEP 2.Add 4 tbsp cornflour and mix and toss to ensure that all the pieces are well coated.
  • STEP 3.Heat sufficient oil in a pot for deep frying the aubergine.
  • STEP 4.When the oil is hot add the pieces of aubergine and deep fry for 6 minutes till the vegetable is lightly golden.
  • STEP 5.Use a slotted spoon to remove the aubergine and drain off any excess oil.
  • STEP 6.Heat 1 tbsp oil in a pan and add 3 cloves finely chopped garlic, ½ cm ginger finely chopped, 2 finely chopped spring onions and fry for a few seconds.
  • STEP 7.Then add 2 tomatoes cut into bite size pieces and 1 red pepper cut into bite size pieces. Stir fry for 1 minute.
  • STEP 8.Next add the pieces of fried aubergine, 1 tbsp soy sauce, 1 tbsp sugar and salt to taste. Stir well to combine flavours.
  • STEP 9.Stir fry for 1 minute. Turn off the heat.
  • STEP 10. Transfer the aubergine and green pepper stir fry to a bowl and serve hot.
