STEP 1.In a preheated pan add ¼ cup ghee, 2 tbsp halved cashew nuts. Roast on medium heat for 3 to 4 till golden brown and crisp. Keep aside.
STEP 2.In a saucepan add 3 cups of water , 1 cup of sugar. Stir and allow the water to come to a brisk boil. Dissolve the sugar. Turn the heat to low and let the water simmer.
STEP 3.To make the halwa, in a pan add 1 cup whole wheat flour (atta/ gehun), 1 cup ghee and stir to combine well. The mixture will become thick liquid consistency. At this stage turn the heat to low and continue roasting till the wheat turns slightly darker brown.This may take 5 to 6 minutes. Add 1 tsp cardamom powder.
STEP 4.Next add the warm sugar water a little at a time and stir the halwa continuously. The wheat mixture will begin to absorb the water and thicken as the water is added. Continue till all the water is added and absorbed.
STEP 5.Increase the heat and stir briskly till the halwa thickens to a thick crumb like consistency when spread out.
STEP 6.Stir for 2 to 3 minutes till a thick halwa consistency is reached.
STEP 7.Plate the atte ka halwa and top with ghee roasted cashew nuts.
Special Comments
STEP 1.If cashew nuts are roasted on high heat, they will brown quickly on the outside but remain raw on the inside.
