STEP 1. soak rice in water for a few hours. strain the water and let the rice dry on a paper towel.

STEP 1.using a blender turn the soaked rice into a fine powder and sieve it well. cover the rice powder with a moist cloth.

STEP 1. in a pan take jaggery and water and let it boil and then strain it to get rid of impurities.

STEP 1. once cooked turn off the flame and then to this gradually add your rice flour. keep on stirring continuously in order to avoid the formation of lumps.

STEP 1. to this add dry ginger powder, cardamom powder and mix it well. transfer it to another vessel and add some ghee.

STEP 1.cover the vessel with a cotton cloth and then close the id once it cools down. Keep it like this for 24 hours.

STEP 1. after 24 hours take out a little bit of batter, make balls and flatten it with your hands. heat some oil in a pan and fry the athirasam in it until they turn golden brown.
