  • 1 cup All Purpose Flour
  • 1 cup Desiccated Coconut
  • 1/2 cup Granulated Sugar
  • 1/2 cup Dried Apricots, Chopped
  • 125 gram Unsalted Butter
  • 2 tablespoon Golden Syrup
  • 1/2 teaspoon Baking Soda
  • 2 tablespoon Boiling Water

Cooking Directions

  • STEP 1.Preheat the oven to 160°C (320°F) and line a baking tray with parchment paper.
  • STEP 2.In a large bowl, combine the oats, flour, coconut, sugar, and dried apricots.
  • STEP 3.In a small saucepan, melt the butter and golden syrup over low heat.
  • STEP 4.In a small bowl, dissolve the baking soda in the boiling water and add it to the melted butter mixture.
  • STEP 5.Pour the melted butter mixture into the dry ingredients and mix until well combined.
  • STEP 6.Roll tablespoonfuls of the mixture into balls and place them onto the prepared baking tray, leaving space between each biscuit.
  • STEP 7.Flatten each ball slightly with the back of a spoon.
  • STEP 8.Bake for 12-15 minutes, or until golden brown.
  • STEP 9.Allow the biscuits to cool on the baking tray for 5 minutes, then transfer them to a wire rack to cool completely.
  • STEP 10.Store the biscuits in an airtight container for up to 1 week.
