Pinakbet means shrunk or shrivelled in the indigenous ilokano language in philippines, and is a really apt name for this healthy, steamed vegetable dish, where a colorful mix of eggplants, squash, bitter gourd, string beans and okra are simmered till soft and wrinkly. Its a nutritious addition to any dinner table and is best eaten with steamed white rice.
