We all consider dosa as a healthy food and make it even healthier and colourful I came up with this unique Hibiscus Dosa Recipe.

STEP 10.Once the mustard seeds start to crackle add in the sliced onion and saute till slightly golden
STEP 11.Add chopped ginger and cook until it's raw smell disappears
STEP 12.Now add the potatoes and crush them before adding
STEP 13.Next add salt , turmeric, chilli powder and give a good mix.
STEP 14.Cook for 2-3 minutes in medium flame stirring occasionally
STEP 15.You can splash a little water if the potatoes appear to be a little dry .
STEP 16.Once done add the chopped coriander leaves, give a final mix and turn off the heat. Masala is ready.
STEP 17.Now take the fermented dosa batter and add the hibiscus tea to bring it to a thick pourable and spreading consistency
STEP 18.Don't add the hibiscus tea at once add little by little keeping the batter consistency in check
STEP 19.Now heat up a tawa on medium heat (cast iron preferably) and add a little butter or oil and rub it all over the tawa surface ,now rub a tissue paper over it to make sure their is no excess oil on the pan
STEP 20.Sprinkle some water and once it starts to sizzle pour a ladle full of dosa batter into the hot pan and start spreading it in circular motion immediately , try to make it as thin as possible.
STEP 21.Cook for a minute and when it starts to get golden and crisp add the prepared potato filling and roll it .
STEP 22.Take out the dosa on a plate and serve hot with sambar and coconut chutney.
STEP 23.Repeat the same process for rest of the batter.
STEP 24.*Try to whisk and mix the batter with hand to incorporate air into the batter this will help in fermentation process
STEP 25.** Don't over ferment the dosa batter otherwise the dosas will taste sour and the batter won't be spreadable
STEP 26.*** you can add the hibiscus tea while grinding the rice and dals too if you want
