Ingredients for Antioxidant rich hibiscus dosa Recipe

  • As required dosa batter
  • 0.07 cup rice (sonamasuri rice/any short grain rice)
  • 1/50 gram Blacksplit (urad dal )
  • 0.21 gram Bengallentils (Chana dal)
  • 1/25 tsp fenugreek seeds
  • 2.50 nos - dried Hibiscus petals (you can use fresh flower petals too)
  • As required Masala stuffing
  • 0-0.07 nos boiled potatoes
  • 0.07 nos medium size Onion (sliced)
  • 1/25 tsp ginger (finely chopped)
  • 0-0.07 nos green chillies (chopped)
  • 0.07 tbsp Refined Oil
  • 1/25 gram Bengallentils
  • 1/25 tsp mustard seeds
  • As required A pinch of asafoetida (hing)
  • 1/25 tsp red chilli powder
  • 1/50 tsp turmeric powder
  • As required A spring of curry leaves
  • As required Some fresh Coriander leaves (finely chopped)
  • As required salt to taste

Directions: Antioxidant Rich Hibiscus Dosa Recipe

  • STEP 1.Clean and soak rice
  • STEP 2.Black gram split,Split Bengal gram lentils
  • STEP 3.Fenugreek seeds for 4-5 hours .
  • STEP 4.Once rice and dal is soaked drian the excess water completely and blend everything to make a slightly coarse batter
  • STEP 5.Add some water to make the process easier
  • STEP 6.Transfer the batter in to a bowl ,mix salt to taste ,cover and leave it in a humid place to ferment for 8-10 hours
  • STEP 7.Steep hibiscus petals in 1/2 cup hot water until it releases all it's colour , once done remove the petals and save the tea for later use
  • STEP 8.To prepare the masala in a pan heat up some oil
  • STEP 9.Then add mustard seeds ,asafoetida, split chickpea lentils and curry leaves
  • STEP 10.Once the mustard seeds start to crackle add in the sliced onion and saute till slightly golden
  • STEP 11.Add chopped ginger and cook until it's raw smell disappears
  • STEP 12.Now add the potatoes and crush them before adding
  • STEP 13.Next add salt , turmeric, chilli powder and give a good mix.
  • STEP 14.Cook for 2-3 minutes in medium flame stirring occasionally
  • STEP 15.You can splash a little water if the potatoes appear to be a little dry .
  • STEP 16.Once done add the chopped coriander leaves, give a final mix and turn off the heat. Masala is ready.
  • STEP 17.Now take the fermented dosa batter and add the hibiscus tea to bring it to a thick pourable and spreading consistency
  • STEP 18.Don't add the hibiscus tea at once add little by little keeping the batter consistency in check
  • STEP 19.Now heat up a tawa on medium heat (cast iron preferably) and add a little butter or oil and rub it all over the tawa surface ,now rub a tissue paper over it to make sure their is no excess oil on the pan
  • STEP 20.Sprinkle some water and once it starts to sizzle pour a ladle full of dosa batter into the hot pan and start spreading it in circular motion immediately , try to make it as thin as possible.
  • STEP 21.Cook for a minute and when it starts to get golden and crisp add the prepared potato filling and roll it .
  • STEP 22.Take out the dosa on a plate and serve hot with sambar and coconut chutney.
  • STEP 23.Repeat the same process for rest of the batter.
  • STEP 24.*Try to whisk and mix the batter with hand to incorporate air into the batter this will help in fermentation process
  • STEP 25.** Don't over ferment the dosa batter otherwise the dosas will taste sour and the batter won't be spreadable
  • STEP 26.*** you can add the hibiscus tea while grinding the rice and dals too if you want
