Directions: Amish Potato Bread Recipe

Cooking Directions

  • STEP 1.In a large mixing bowl, dissolve yeast in warm water and let it sit for 5 minutes until frothy.
  • STEP 2.Add mashed potatoes, sugar, salt, butter, and 2 cups of flour to the yeast mixture. Mix well.
  • STEP 3.Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms.
  • STEP 4.Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  • STEP 5.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  • STEP 6.Punch down the dough and divide it into two equal portions. Shape each portion into a loaf and place them in greased loaf pans.
  • STEP 7.Cover the pans with the kitchen towel and let the dough rise for another 30-45 minutes.
  • STEP 8.Preheat the oven to 375°F (190°C).
  • STEP 9.Bake the loaves for 25-30 minutes or until golden brown and the bread sounds hollow when tapped.
  • STEP 10.Remove the bread from the pans and let them cool completely on a wire rack before slicing.
  • STEP 11.Store the Amish Potato Bread in an airtight container at room temperature for up to 3 days.
  • STEP 12.Serve the bread sliced and enjoy it as a sandwich bread or with your favorite spreads.

Cooking Tips

  • Make sure the mashed potatoes are cooled before adding them to the yeast mixture.
  • If the dough is too sticky, add a little more flour, but be careful not to add too much as it can make the bread dense.
  • To check if the bread is fully baked, insert a toothpick into the center of the loaf. If it comes out clean, the bread is done.
  • For a softer crust, brush the top of the loaves with melted butter as soon as they come out of the oven.

Storage and Serving

  • To store the bread, place it in an airtight container or wrap it tightly in plastic wrap.
  • You can also freeze the bread for longer storage. Slice it before freezing and thaw individual slices as needed.
  • To serve, slice the bread with a sharp knife and enjoy it as a sandwich bread or toast it for a delicious breakfast.
