This is a famous dish from surat, gujarat. It is made from chana dal and spices. You can serve as snack or as breakfast.
This is one of my late mother's favorites dish. This is her recipe and I too follow this.
STEP 1.1) wash and soak chana dal in water for 6-8 hours or overnight.
STEP 2.2) Grind chana dal along with green chilies, garlic cloves, ginger, citric acid and required water. Add water gradually and make thick batter.
STEP 3.3) Add salt, asafoetida, turmeric powder and mix well. Batter is ready.
STEP 4.4) Bring enough water to boil in steamer. Grease deep bottom thali or mould with oil.
STEP 5.5) Now add soda bicarbonate in batter and mix in one direction. Pour batter into greased thali immediately and put into steamer.
STEP 6.6) Close the steamer and steam for 25-30 minutes or until done. Cool down at room temperature.
STEP 7.7) Unmould it, cut into big pieces and grate with grater. This is called khamni. Now do tadka.
STEP 8.8) In a pan heat oil. Add mustard seeds. When crackles add asafoetida and slit green chilies. Add cashew nuts, raising and sesame seeds. Saute for sometimes.
STEP 9.9) Now add water. Add sugar and salt ( for water part) . When water comes to boil, add prepared grated khamni and mix well.
STEP 10.10) cook until water absorbs. Add chopped coriander leaves and lemon juice. Mix well.
STEP 11.12) At the time of serving add sev and Pomegranate seeds according to your taste. Delicious amiri sev khamni is ready. Enjoy.
