A delicately flavoured one-pot dish of potatoes cooked in tomato and spices. This is a very easy and simple aloo tamatar sabzi which you can make for Navratri fasting or any other fasting days. Potatoes are very friendly and handy vegetables for home cooks. they are good on their own or in company with other vegetables.

Ingredients for Aloo Tamatari Sabji Recipe

  • 2 No.s Potatoes. Peeled, diced and soaked in water to avoid discoloration
  • 2 teaspoon Mustard Oil
  • 1 teaspoon Kalonji seeds
  • 1 inch Ginger chopped
  • 1 Onion chopped Nos
  • 1 Bay leaf Nos
  • 1 stick Cinnamon broken inch
  • 2 No.s Tomatoes. Chopped
  • 1 teaspoon Red chilli powder
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Garam masala powder
  • 6 sprig Coriander leaves chopped for garnishing

Directions: Aloo Tamatari Sabji Recipe

step 1

  • STEP 1.Heat the pressure cooker and add 2tsp mustard or sunflower oil, 2tsp kalonji seeds.add 1 inch ginger finely chopped, 1 onion finely chopped, 1 bay leaf torn, 1 inch broken cinnamon stick.

step 2

  • STEP 1.Saute the onion and spices till the onions turn soft and golden. Do not caramelise.

  • STEP 1.Then add 2 finely chopped tomatoes, 1 tsp red chilly powder, ½ tsp turmeric powder, 1 tsp garam masala powder, 1 tsp coriander powder and salt to taste.

  • STEP 1.Saute for about 3 to 4 minutes till tomatoes are cooked soft and smash easily when pressed.

  • STEP 1.Then add the diced potatoes along with the water they were soaking in. Water level in the cooker should be just upto the level of the potatoes.

step 6

  • STEP 1.Cover the cooker and pressure cook for 4 to 5 whistles , approximately 15 minutes. Turn off the heat and allow the pressure to release naturally. Open the cooker and check the potatoes they will be firm but cooked through.

step 7

  • STEP 1.Next add 6 sprigs of coriander leaves chopped. This heightens the flavour of the tamatari curry. Turn off the heat.
