Cooking Directions

  • STEP 1.In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  • STEP 2.Add ginger-garlic paste and sauté for a minute. Then, add mashed potatoes, turmeric powder, red chili powder, garam masala, and salt. Mix well.
  • STEP 3.Cook the potato mixture for a few minutes until the flavors blend together. Remove from heat and let it cool slightly.
  • STEP 4.Take a roti or tortilla and spread some green chutney and tamarind chutney on it. Place a portion of the potato mixture in the center and top it with chopped onions and cilantro.
  • STEP 5.Roll the roti tightly, tucking in the sides as you go. Secure the ends with a toothpick if needed. Toast the frankie on a griddle until it is crispy and golden brown.
  • STEP 6.Serve the Aloo Frankie hot with additional chutneys or ketchup on the side.
