Almond cookies are unique sweet. They are made from almonds and cashew nuts blended with saffron and cardamom. This sweet can made for many festivals and occasions. No baking powder or soda is added.No flour is added. This make it healthy and delicious. Kids can have it with milk.

Ingredients for ALMOND COOKIES (BADAM PURI) Recipe

  • As required Almonds ¾ cup
  • As required Broken cashew nuts ¼ cup
  • As required Powdered sugar ½ cup
  • 4 tablespoon Kesar (saffron) few strands dipped in lukewarm water for minutes
  • As required You can use lukewarm milk too
  • As required Elaichi (cardamom) powder ½ teaspoon
  • 1/4 teaspoon Slices of almonds and pistachio
  • 1/2 tablespoon Milk room temperature use

Directions: Almond Cookies (badam Puri) Recipe

  • STEP 1.In a blender make almonds powder on pulse mode so that the mixture remains dry, it should not be sticky.
  • STEP 2.Similarly make cashew nuts powder too.
  • STEP 3.Sieve almond and cashew powder.
  • STEP 4.In a mixing bowl add almond and cashew nut powder, add powdered sugar .
  • STEP 5.Mix well so sugar lumps are left.
  • STEP 6.Add cardamom powder and kesar (saffron)mixture.
  • STEP 7.Mix well softly just together everything.
  • STEP 8.Don’t knead it
  • STEP 9.Add 1 teaspoon milk to bring everything together to make a soft dough.
  • STEP 10.Add more milk if required to make a soft dough.
  • STEP 11.Divide the dough into 2 portions.
  • STEP 12.Greased a butter paper, place on a wooden board.
  • STEP 13.Place one portion of the almond mixture.
  • STEP 14.Cover it with butter paper and roll a thick round.
  • STEP 15.Cut shape with cookie cutter.
  • STEP 16.Preheat oven for 10 minutes at 200 * on broil mode (upper coil).
  • STEP 17.On a wooden board place greased butter paper.
  • STEP 18.Arrange almond cookies on it leaving space in between.
  • STEP 19.Place the cookies in the oven along with the wooden board.
  • STEP 20.Keep the oven door open.
  • STEP 21.Bake them for 7 minutes at 250 * or till u get golden brown spots on the cookies.
  • STEP 22.Rotate the cookies in between as shown in video.
  • STEP 23.Be careful while doing it as oven is very hot.
  • STEP 24.Once you see golden brown spots on cookies.
  • STEP 25.Take it out from oven. Let it cool for a minute.
  • STEP 26.Now flip it on other side.
  • STEP 27.Garnish with slices of nuts.
  • STEP 28.Rotate in between so that all the cookies are baked well.
  • STEP 29.Bake it till you see golden spots on this side too.
  • STEP 30.It will take approximately 5 to 7 minutes.
  • STEP 31.Let them cool down completely.
  • STEP 32.Store them in air tight container.
  • STEP 33.Notes -If broil not available in your oven you can bake it in hot oven. keep the oven door open. You can make this cookies in non stick pan by preheating pan on slow flame
