Almond briwat is a staple Moroccan cookie - these sweet triangular almond spring rolls are bites that are so easy to make. It is prepared from raw almonds, sugar, cinnamon, mastic gum, blossom water, egg, honey, and sesame seeds.
STEP 1.Sprinkle some oil on a cooking pan and roast the walnuts for about 2 minutes to enhance their flavor.

STEP 2.Grind the walnuts very finely, it might take 2-3 times to do this process until you get a smooth consistency.

STEP 3.Continue grinding the walnut with the sugar and cinnamon, then add the melted butter and blossom water to the walnuts paste.

STEP 4.Because fillo dough is very delicate, take 2 stripes of fillo dough, one on top of the other.

STEP 5.Generously brush the top fillo leaf with melted butter, then cut the fillo into 4 long strips.

STEP 6.Put the filling in one tip of the stip then cover the filling with the other tip to make a triangle. Repeat the same for the rest of the dough.

STEP 7.Brush the last tip of the fillo with egg yolk and close the briwat, don’t worry if the briwat is not perfect, once they are fried, all the imperfections will disappear.

STEP 8.In a frying pan heat some oil, fry the briwat for few minutes until they turn golden brown, then take out briwat from the oil, and dip them in warm honey.

STEP 9.Now take out the briwat from the honey and sprinkle them with some sesame seeds. Serve them cold with moroccan tea!
