This is my take on the ubiquitous latino stew, ajiaco. This version uses leftover roast beef, sweet red peppers, and creamy baby potatoes simmered together in a spicy broth.
Ingredients for Ajiaco (Beef And Pepper Stew) Recipe
1/2 tablespoon Canola oil
1/4 cup Thickly sliced shallots
1/2 tablespoon Minced Garlic
1/2 inch Red bell peppers, cut into 1 s
0.38 teaspoon Chipotle chile powder, or to taste
1/2 teaspoon Ground Cumin
3/4 cup Cubed cooked roast beef
1/4 pound Baby red potatoes, cut in half
1/2 cup Water
1/4 quart Beef broth
0.13 teaspoon Dried oregano
As required Salt and pepper
0.06 cup Chopped Parsley
