World Chocolate Day 2024: Chef Mahesh Pal Singh Shares 2 Recipes

World Chocolate Day on July 7 celebrates the depth of flavours that chocolate has to offer. From milkshakes to confections, the ingredient finds its use in a variety of recipes. It is even used in many salty snacks to give them a modern twist and make for a perfect gift to bribe children at home.

This World Chocolate Day, if you are looking to try some new recipes, who better to take inspiration from than a chocolatier? Chef Mahesh Pal Singh, Head Chocolatier at SMOOR, an artisanal chocolate brand, shared two exclusive recipes with Slurrp. 

Salted Peanut Barks

Ingredients

  • 40 grams of milk chocolate
  • 40 grams of dark chocolate
  • 3.2 grams of coconut powder
  • 16.8 grams of peanut butter
  • 0.4 grams salt

Method

Process Of Chocolate Tempering

  • Keep one-third of the chocolate aside and melt the rest in the microwave. Make sure the temperature does not exceed 45°C.
  • Add the reserved chocolate to the melted chocolate and keep stirring until you have a smooth mixture with no lumps and the temperature reaches 31°C.
  • Spread the chocolate on a parchment paper. If it has tempered to perfection, it will release easily while flaunting a firm texture and shiny surface.

Process To Make Salted Peanut Barks

  • Temper milk and dark chocolates separately and combine them well.
  • Add peanuts, coconut powder, butter, and salt to the mixture and whisk it well.
  • Lay a parchment paper on a clean table and spread the chocolate mixture on it using a spatula. 
  • A rubber spatula will help you spread the mixture better and facilitate you to ensure all the edges are of the same thickness.
  • Once the bark is set, break it into pieces. 
  • Store the pieces in an airtight container and enjoy these delicious snacks whenever you want.

Fruit And Nut Chocolate Bar

Ingredients

  • 79 grams of dark chocolate
  • 11 grams of fruits and nuts of your choice (almonds, raisins, and cashews)

Method

  • Start by keeping aside one-third of the chocolate in a separate bowl.
  • Microwave the rest of the chocolate to melt it and add the remaining solid chocolate to it.
  • Run the test to ensure the dark chocolate has tempered to perfection.
  • Take chocolate moulds and pour tempered chocolate into the sections.
  • Top each mould with your choice of fruits and nuts.
  • Tap the tray on the counter to remove any bubbles.
  • After refrigerating moulds for 10-15 minutes or until they are set, serve them to your loved ones and guests.
