Dark Chocolate (70-85% Cacao)

It typically contains a minimal amount of added sugar and may be dairy-free, making it suitable for vegans or those with lactose intolerance. The composition of a 70-85% cacao dark chocolate bar usually includes high amounts of cacao solids, cocoa butter for richness and a minimal amount of sugar to balance the bitterness of the cacao solids.  

Milk Chocolate (30-45% Cacao)

Milk chocolate has a lower cacao percentage compared to dark chocolate, resulting in a milder and sweeter taste. The cacao percentage in milk chocolate typically ranges from 30% to 45%. White Chocolate (20-30% Cacao) 

White chocolate is unique among the chocolate varieties, as it does not contain any cocoa solids. Instead, it is made from cocoa butter, sugar, and milk solids. The cacao percentage in white chocolate usually falls between 20% and 30%.
