Winters are my favourite season. One reason is that everything is cold outside while you are cozy and warm on the inside. Curling up in the blanket with a hot chocolate and a slice of cake on the side, that’s my idea of a perfect winter movie night. Now, while you can order everything online these days, there is a charm to whipping your own coffee and baking your own cake. Baking a cake is quite an art I realized while helping my mother bake a chocolate ganache cake for my birthday last year. Although it is tedious, at the same time, it is a fun job too.
Another reason I love winters is because of Christmas. I’ve always been fond of the holiday season and the festive vibes during this time. Along with the cute X’mas decorations and gifts, what I love the most are the cakes. Freshly baked, soft and moist cakes are prepared and sold across bakeries in town. Although there is still time for Christmas, there is no right time for a cake.
Here are some winter special cakes that you can gorge on this season.
1. Jaffa Cake
This interestingly-named cake is inspired by jaffas. Jaffas, for the unversed, are a round sweet of Australian origin, popular in New Zealand. The chocolate balls are flavoured with orange and that’s the basis of this winter cake too. The chocolate-orange combination forms the top of the cake, where jaffas are crushed and sprinkled on the ganache.
2. Chocolate Mayonnaise Cake
Did you ever think mayonnaise could be used in a cake? We never thought so too until this chocolate mayonnaise cake came up. The idea is to substitute eggs and butter with a creamy mayonnaise to maintain the soft and moist texture of the cake.
3. Orange Poppy Seed Cake
A tangy combination of lurpak butter and chopped oranges, you need to mix everything together and bake it in the oven right away. The zest of orange makes this fruity cake taste really good and moist.
4. Apple Fritter Cake
Another fruity addition to your winter specials is this apple fritter cake. Finely sliced apples are glazed and placed in the layers of moist beer bread. Dig into this wholesome cake for morning meals or even snacks.
5. Custard Cake
Wondering why we’ve combined two different desserts? Well, to get the best of both worlds. The custard powder is used to flavour this soft and moist sponge cake. A great tea-time cake to enjoy in the evenings.
6. Pineapple Pound Cake
The sweet and tangy pineapple slices are crushed and mixed in the cake batter along with the fruity juice. The final layer of cake will have a creamy pineapple topping that will take you on a pineapple ride.
