Spiced Pear Martini By Kashyap Salla, Zyoto

Ingredients:

  • 60 ml vodka
  • 30 ml pear juice or nectar (if you can't find pear juice, you can use apple juice with a few drops of pear extract)
  • 15 ml  fresh lemon juice
  • 15 ml  simple syrup
  • 2 dashes Angostura bitters
  • 1 cinnamon stick, for garnish
  • Fresh pear slices, for garnish (optional)

Instructions:

  1. Chill a martini glass in the freezer for at least 15 minutes.
  2. In a cocktail shaker filled with ice, combine vodka, pear juice, lemon juice, simple syrup, and bitters.
  3. Close the shaker tightly and shake well until the outside is frosty.
  4. Strain the mixture into the chilled martini glass.
  5. Garnish with a cinnamon stick and a fresh pear slice.

Mulled Wine By Sr Bartender Kuber Bhatt, The Bluebop Cafe 

Ingredients:

  • 1 bottle of red wine (750 ml) 
  • 1 orange, sliced  (plus extra for garnish)
  • 4-5 whole cloves
  • 2-3 cinnamon sticks
  • 2-3 star anise
  • ¼ cup sugar
  • ¼ cup brandy
  • 1-2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large pot, add the wine, sliced orange, cloves, cinnamon sticks, star anise, sugar, and brandy.
  2. Warm the mixture over low heat. Do not let it boil, as this can burn off the alcohol. Simmer for about 20-30 minutes, allowing the spices to infuse.
  3. Taste the mulled wine and add more sugar or honey if desired. You can also add lemon juice for a hint of tartness.
  4. Strain the mulled wine into mugs, removing the spices and orange slices. Garnish with a fresh s slice of orange, cranberries, or a cinnamon stick.
  5. Serve warm and savour the festive flavours!

Ingredients:

  • 50 ml Bourbon Whiskey
  • 10 ml Spiced Honey
  • 10 ml Ginger Juice
  • 90 ml Hot Butterfly Blue Pea Tea

Glassware:

  • Brandy Balloon

Garnish:

  • Dehydrated Orange
  • Butterfly Blue Pea Flower

Instructions:

  1. Combine the bourbon whiskey, spiced honey, and ginger juice in a brandy balloon glass.
  2. Add the hot butterfly blue pea tea.
  3. Stir gently to blend the flavours.
  4. Garnish with a dehydrated orange slice and a butterfly blue pea flower.

Tiramisu Negroni By Mahfuz Shaikh, Head Chef at Napoli by Shatranj, Mumbai

Ingredients:

  • 250 ml gin
  • 10-12 ladyfinger biscuits
  • 30 ml sweet vermouth
  • 30 ml campari
  • 1 shot espresso
  • 60 ml mascarpone
  • Milk (for milk wash)

Instructions:

  1. Sous vide the ladyfinger biscuits in gin at 65°C for 1.5 hours. Once done, strain and set aside.
  2. In a mixing glass, combine the infused gin, sweet vermouth, Campari, espresso, and mascarpone.
  3. Gradually add milk, stirring gently. Let the mixture rest for 2 hours before filtering through a coffee filter.
  4. Pour the mixture over ice and garnish with a sprinkle of cocoa powder or a ladyfinger for the final touch.
