When winter arrives, there's nothing more reassuring than the aroma of freshly cooked roti, particularly when it's made with healthy millets or grains such as bajra, jowar, and makki. Not only can these classic chapatis keep you warm in the winter, but they also serve as a source of nourishment. Every kind of roti has its own special flavour and set of health advantages; some are more rustic, like bajre ki roti, while others are more healthful, like jowar ki roti. The process of perfecting the technique of making these winter chapatis is unmatched, despite their reputation for being rather difficult to produce. In addition to these time-honoured chapatis, the collection also features the aromatic misi roti, a spicy spin on the classics. Masterchef Pankaj Bhadouria shares five winter chapatis recipes that are a treat for the taste buds and a window into India's storied culinary history. Here are some winter chapatis to warm you up and fill you up, so gather around the fire and enjoy the simple joy of breaking bread.
