Who Said Vegan Can’t Taste Good

It can be hard to sustain a vegan lifestyle. Thank god for meat alternatives that save the day. This Jackfruit Tuna Melt is a great twist to an average cheese sandwich. The flavours of jackfruit will satiate the foodie and vegan in you. The texture is akin to pulled pork or shredded chicken after being cooked and split apart. Because other plant-based proteins like tofu and seitan don't meet their need for a meaty texture, it is popular among vegans and vegetarians. To give the jackfruit a marine flavour, it is gently boiled and spiced with kelp granules. It is flawless in every way. Give this vegan recipe a try, serve it to your guests and they’ll fail to point out the difference.

Ingredients

1. 1 can jackfruit (packed in water or brine, not syrup), rinsed and drained

2. ½ teaspoon olive oil

3. ¼ onion, diced (about a ½ cup)

4. 1 teaspoon kelp granules

5. 1 cup cooked great northern white beans

6. 2 cloves garlic, minced

7. 1 tablespoon diced jalapeno

8. ¼ cup mayonnaise

9. 2 tablespoons pickled relish

10. 1 ½ tablespoons Dijon mustard

11. 4 slices of bread

12. Choice of greens

13. 1 tomato, sliced

14. Cheddar cheese

1. To rip the jackfruit into shreds, use a fork.

2. In a big frying pan over medium heat, warm the olive oil. For a few minutes, add the onion and garlic and sauté. When the jackfruit has lost all of its moisture, add it to the pan and simmer, stirring periodically. Add salt to taste along with the kelp granules. Get rid of the heat.

3. Start the salad while the jackfruit is cooking. The white beans should be mashed with a fork in a bowl. Add the remaining salad ingredients and stir once they have been fully mashed. Add the cooked jackfruit to the salad mixture and combine until evenly covered. If required, taste and add spice.

4. Activate the broiler. Lay out the four bread pieces. On two of the slices of bread, scatter some greens. Add tomato slices and jackfruit salad (a generous 1/2 cup each sandwich) on top. Spread the grated cheese on the remaining bread slices.

5. The two cheese-topped bread slices should be placed on a baking pan and placed under the broiler in the oven. Allow to broil for 2 to 4 minutes, or until the cheese starts to melt. Slices with jackfruit salad on top should be removed and placed on top of the slices.

6. Lightly mist a big frying pan with olive oil and heat over medium-low heat. Put the cheese side of the sandwiches in the pan. Cook until the cheese starts to melt. Spray the sandwiches' tops with a little olive oil. Cook the sandwiches on the other side by flipping them. If necessary, flip again. When the cheese has melted and the bread is toasty, the sandwiches are finished. Serve right after removing it from the pan.
