This whole flour muffin recipe can be a good starting point if you're looking to make a healthier version of muffins. These muffins also work great for people who follow a gluten-free regimen.
What you need
- 3 tablespoons butter ( melted and unsalted )
- 2 tablespoons apple sauce ( unsweetened )
- ¼ cup granulated sugar
- 1 egg
- ½ cup milk
- 1½ whole wheat flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ¼ teaspoon nutmeg
- 1½ teaspoon cinnamon powder
Method
- Preheat the oven to 350 degrees and generously grease the muffin tin.
- For wet ingredients, take a medium bowl, combine the melted butter, apple sauce, sugar, egg and milk until properly mixed.
- For dry ingredients, take a small bowl, combine the flour, baking powder, salt and nutmeg.
- Now, make the batter by mixing wet ingredients into the dry ingredients.
- Fill the batter 2/3 in each muffin compartment.
- Bake for 15-18 minutes, until the muffins are slightly squeezed.
- Before baking the muffins, melt the butter in a shallow bowl. In a separate bowl, add granulated sugar and cinnamon powder.
- When the muffins are cooked, take them out of the oven and put them in the fridge for 1 minute.
- Then gently brush butter on the muffins to cover all sides and grease the mixture of cinnamon powder and sugar. Your cinnamon-flavoured muffins are ready.
Tip: You can also add ripe mashed bananas to the wet ingredients. To garnish it, you can add some chocolate chips on top of the muffins.
These muffins are best eaten on the same day but can also be stored in an airtight container for 2-3 days at room temperature.
