Can you think of making any other meal than omelette toast, when you are too exhausted to cook anything? Eggs taste even more delicious on days when nothing else seems to whet our appetite. There is just something really delicious about biting into a fluffy omelette that has been cooked to perfection.
While there are a lot of ways to spice up an omelette, we decided to mellow it down with this recipe. The addition of coconut milk lends a light and nutty flavour to your omelette. Also, coconut omelette is a little sweet, but isn’t that itself such a wonderful contrast to the nuttiness?

You can try making this ingenious recipe at home, especially on a day when you feel too damn hungry for anything that gives visions of the tropics! If you’d like, you can fry up some shrimp, fish or chicken to go with the omelette. You may serve the omelette with crunchy toast, butter and a cup of filter coffee. Sounds incredible? INGREDIENTS
- 3 eggs
- 2 tablespoons coconut milk
- 1 tablespoon butter
- 1/2 chopped onion
- 1/2 chopped capsicum
- 1/2 chopped tomato
- 1 grated cubed cheese
- 1 teaspoon salt
- 1 teaspoon pepper
METHOD
1. In a pan, melt butter on medium flame.
2. Crack three eggs in a mixing bowl.
3. Add coconut milk, chopped onions, capsicums and tomatoes.
4. Using a whisk, mix the eggs constantly for 30 seconds.
5. Now add grated cheese, salt and pepper.
6. Pour the mixture into the pan. Allow it to cook on one side.
7. Once the bottom is brown, flip it over. Cook for 2-3 minutes.
8. Serve with butter toast.
