Ingredients
For the Strawberry Liquid
- 1 ¾ cups quartered strawberries, fresh or frozen
- ¾ cup granulated sugar
For the Cookies
- 2 cups flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup butter
- 1 ¼ cups plus 2 tablespoons granulated sugar
- 1 teaspoon pure vanilla extract
- ¼ cup milk
- 3.5 tablespoons strawberry liquid
- ¼ teaspoon red food colouring
Method
- In a saucepan set over medium heat, cook out the sugar and strawberries for about 10 minutes until they form a thick syrup then strain it through a fine sieve to remove the lumps.
- To make the cookies, whisk together the flour, baking powder and salt.
- In an electric mixer beat the butter and sugar together until aerated and creamy.
- Slowly add your strawberry syrup and vanilla until combined.
- Then start adding in the flour mixture and if desired, add some red food colouring too.
- Chill the dough for 1-2 hours.
- Preheat an oven to 180 C and then scoop your dough onto a lined baking sheet.
- Bake for 15 minutes, let them cool and then decorate with icing.
