Vaani Kapoor & Anushka Ranjan Share A Recipe For Almond Flour Samosas

Given the pressures of the business, Bollywood actresses usually maintain a strict fitness and diet routine for their fit physiques. However, actresses Vaani Kapoor and Anushka Ranjan seemed to have found a way around making their favourite cheat foods more accessible by putting a healthy spin on it. In a video shared by the two women on social media, Vaani and Anushka are seen drooling over the prospect of bingeing on samosas and pakoras during the lush monsoon – quickly segueing into a recipe for samosas made using almond flour.

The gluten-free recipe, which uses a combination of almond and tapioca flour, was something that Vaani and Anushka stumbled upon as a way to avoid the deep-fried delicacy which usually uses all-purpose flour. As they get on with making the samosas, Vaani also decides to shake up a large jug of hibiscus iced tea sweetened with honey that they can sip on, while munching on their air-fried version. Starting off by making a dough, Vaani and Anushka share some laughs at the former’s tendency to be clumsy while spilling water all over the kitchen counter.

Vaani also burned herself momentarily while the chilli spluttered in the tempering, but quickly recovered as the anticipation for biting into the samosa increased. Captioning the video, she said, “When you’re with us – don’t be shocked if the food Vaani-shes cause you know we’re going to Fi-Nush it.”

Ingredients [For Dough] 

  • 1 cup almond flour
  • 1 tablespoon tapioca flour
  • Water, for kneading

Ingredients [For Filling]

  • 1 teaspoon ghee
  • 1 teaspoon cumin seeds
  • 2 green chillies, chopped
  • 2 teaspoons ginger-garlic paste
  • 1 cup green peas
  • 1 teaspoon red chilli powder
  • 1 teaspoon cumin powder
  • ½ teaspoon garam masala
  • 1 teaspoon fennel powder
  • 1 pinch asafoetida
  • 4-5 boiled potatoes
  • Juice of ½ lemon
  • Salt, to taste

Method

  • Combine the flours in a bowl and use enough water to knead into a soft dough. Allow it to rest for the time it takes to make the filling.
  • Heat the ghee in a pan and temper the cumin seeds, green chillies and ginger-garlic paste. Cook for a couple of minutes until aromatic, before adding in the green peas.
  • Toss to combine before adding all the spice powders and crushing the boiled potatoes to mix into the peas and spices.
  • Season with salt and finish off with lemon juice before mashing well and making a homogenous mixture. Divide the dough into equal portions and use a plastic wrap to gently press each portion into a disc.
  • Spoon some of the potato filling into the centre of the disc and fold the corners inwards to make a triangular samosa.
  • Brush each one with oil and cook in an air fryer for 10-12 minutes, until golden-brown and crisp. Serve hot with spicy green chutney.
