Tuesday: Quinoa Avocado Muffins
Take some quinoa in a boiling pot of water. Let it cook and keep it aside to cool. Beat some eggs, add veggies like bell peppers, mushrooms, zucchini and add the avocado. Finally, fold the quinoa in this. In a muffin tray, grease some non-sticky cooking spray and fill them with the mix. Bake it until golden brown on the edges.
These take about 40 minutes to be ready and can be stored for 5-7days.
Wednesday: Avocado Smoothie Bowl
Freeze some sliced bananas till they are solid. Make a seed mix of chia seeds, pumpkin seeds, coconut flakes and almonds with a drizzle of honey or maple syrup. Bake this for a few minutes to get a toasted effect. In a blender, mix the avocado, spinach, mango and bananas for a smoothie-like consistency. Pour it in a bowl. Garnish with freshly chopped fruits and some chia seeds.
You can have this right away and it takes not more than 10-15 minutes to get ready.
