31-year old kindergarten teacher Tommy Pham was a top-7 contestant in the last season of MasterChef Australia and won many hearts. The show gave him a new passion for cooking and even greater exposure to his traditional Vietnamese cooking style. Popularly called the “King of Broth”, he cooked some of the most phenomenal dishes in the MasterChef kitchen. His ‘Banh Mi Croissant’ also made its way to the famous ‘Lune Croissanterie’ menu. Being extremely passionate about South-East Asian fast food, Tommy took up his Instagram profile and shared some easy, mouth-watering recipes. He recently shared a banana fritter's recipe, which is laborsaving and a sweet treat to the taste buds. Here’s the recipe for it.
INGREDIENTS
- 5-6 ripe bananas
- Oil for frying
Batter - ½ cup rice flour
- ½ cup cornflour
- ½ cup desiccated coconut
- ¼ cup sesame seeds
- ½ cup water
- 1/3 cup caster sugar
- ½ tsp baking powder
PROCESS
Cut the bananas in half and flatten them with the side of a knife.
Add all the ingredients to a mixing bowl and give them a good stir.
Bring the mixture to a batter consistency by adding water
Pour some oil into a cooking pot and bring it to medium hit.
Dip bananas in the batter and make sure it's well covered.
Fry the fritters till they are golden brown; flip if needed

- Use ripe monkey bananas or ladyfinger bananas.
- Your fritters won't get the desired sweetness unless the bananas are almost black-ish yellow.
- You might need to increase the amount of sugar if the bananas are mildly sweet.
- Chuck the batter in the freezer for about 30 minutes to make your fritters extra crispy.
