Kachori is a spicy deep-fried delicacy from the Indian subcontinent. It is a round flattened ball made with fine flour. It is stuffed with yellow moong dal or Urad dal, besan, black pepper, red chilli powder, salt, and other spices. It is believed that Kachori hails from the Marwar region of Rajasthan. It was introduced by the Marwaris when this community travelled across India for trading. Marwari cuisine uses mild spices like dhaniya and saunf which makes the dish aromatic. Kachori is served with aloo curry and sometimes chutney, as per the taste of the customer. With time the preparations of kachori have evolved but still, nothing can beat the traditionally made kachori served with aloo curry.
