Chef and author Irick Wiggins who’s an expert on low-carb diets introduced the recipe tonthe baked avocado fries which feature egg and parmesan and pairs the fries with a sriracha mayo dip. It’s possible that this recipe makes more flavourful fries than regular potato fries since parmesan has a balanced savouriness and avocados has a muted sweetness and a creamiess which could make its texture quite interesting.

Crispy Avocado Fries
1/2 an avocado
1 cup Parmesan
1 large egg
Seasonings of your choice
Method
1. Preheat your oven to 450F.
2. Mix all ingredients and shape into fries on a parchment lined baking sheet.
3. Bake for 10-12 minutes, until crispy and golden brown.
