Tendli, also known as ivy gourd, is a type of vegetable which is very common in Indian homes. Usually, people just use tendli as a sole vegetable to make a sabji. Our intention behind pairing up tendli with aloo is that it helps in making any dish more flavorful as potatoes are desirable by everyone. In most Indian households, mustard oil is used to make this side dish because it makes it more tasteful as it helps enhance the best flavors in each and every local cuisine.
Ingredients-
- 250g tendli
- 1 potato
- Red chili powder
- Green chili
- Mustard oil
- Coriander powder
- Salt
- fenu greek seeds
- Asafoetida
- Dry mango powder
- Cumin seeds
- Garam masala
- Pinch of turmeric powder
Method-
- First cut fresh tendlies and potatoes into fine long pieces.
- Soon after, heat oil in the pan and add very little garam masala, pinch of salt and turmeric powder, dry mango powder, asafoetida, cumin seeds etc. Basically add all the masalas as mentioned. You can also add more ingredients of your choice.
- Add both the tendlies and potatoes into the pan. Stir it for a while till all the masalas get absorbed.
- The vegetables might tend to dry out so add water according to the consistency of the sabji.
- Cook for about 5-10 minutes or till the vegetables boil up properly.
- Finally, garnish the dish with coriander leaves.
- Tendli aloo ki sabji is ready! Serve with parathas, roti.
